Phyrexian Ingester acts as both a removal tool and a potential large creature in one. By exiling a threat on your opponent's side of the board, not only do you remove it from play, but you also enhance Phyrexian Ingester in the process. The bigger the creature you exile, the more massive the Ingester becomes.

The mechanic fits the Phyrexian theme quite well. Phyrexians are known for their obsession with perfection and their tendency to augment and assimilate everything they come into contact with. In this case, the Ingester "consumes" a creature and assimilates its power and toughness.
